I enjoyed doing my one month Kind Diet food challenge back in August/September of last year and I’ve been playing with the idea of doing it again, but maybe not quite so strict this time. I followed the superhero diet, but if I do it again I think I will add in some meals from some of the other sections of the book, like the “flirt” recipes that have a bit more variety (and healthier treats). One thing that definitely came out of doing the challenge was my fondness for fried udon, I make it all the time. Case in point, I made it tonight!
Cabbage, onion, garlic, udon noodles, olive oil, paprika, pepper and salt. That’s it and I can usually put it together in about 30 minutes from start to finish. Love quick meals! I’m still not sure if I’ll do an official challenge, but I’ll definitely be revisiting the Kind Diet.
